Back in July, Paul and I were invited to attend Comic-Con with another couple-friend that had some extra tickets. I was "selected" (after I asked) to play the new "Just Dance 2" for the wii. Here is a video of my performance...7 months pregnant :)

40 weeks
well today is my official due date and Luke seems to like where he's at! Just continuing to get bigger and bigger as we anticipate his arrival :)

39 weeks
we were able to go out for our hopeful "last night out" with our friends (Travlyn :) at a super great burger place in la jolla. Paul and I walked around la jolla for a bit after dinner in hopes of starting some contractions, but unfortunately I don't think it helped :)
Things that are difficult
well now that I am officially 39 weeks pregnant, and counting down the hours until we get to meet Luke... I am realizing that there are definitely a few things that are more difficult to do now in my expanded size. A short list of these tasks includes:
-sleeping through the night
-remembering things
-wearing any sort of shoes other than flip flops
-putting on shoes/ tying shoes (I can squeeze my sausages into running shoes for walks)
-releasing the emergency brake on my car
-shaving my legs
-putting on pants, shorts, etc.
-bending over
-seeing my feet
-life
but... it.is.all.SO.worth.it!

Cooking Machine
blame it on "nesting" but I have been a cooking/ baking machine the past two weeks. Here is one recipe I put together... based loosely off a mixture of a few :).
Strawberry Rhubarb Crisp
For the Fruit:
-12oz rhubarb (preferably bright red), ends trimmed, stalks cut crosswise into 1/2-inch-thick pieces
-1lb strawberries, hulled, quartered
-1/2 cup sugar
-2 tsp. flour
-1 tsp lemon zest
-1 Tbs. fresh lemon juice
For the Topping:
-1 stick of chilled butter, cut into 1/2 inch pieces
-1 cup flour
-1/4 cup packed brown sugar
-1/3 cup white sugar
-1/4 tsp. cinnamon
-pinch salt
Vanilla Ice Cream!
Pre-heat oven to 350 degrees. Butter an 8 inch baking dish
In a medium bowl, combine rhubarb, strawberries, sugar, flour, lemon zest & juice. Transfer to prepared baking dish
For topping, combine butter, flour, sugars, cinnamon and salt with fork or fingers to create large crumb texture. Sprinkle evenly over fruit.
Bake 40-45 minutes or until fruit is bubbling and topping is browned. Serve with vanilla ice cream!

New Recipe!
I created a "salad" to go with dinner last night (grilled chicken), based loosely on a recipe found in this month's issue of InStyle magazine...however I didn't like a few of the ingredients (yeah, i'm a picky eater!)... so I made some substitutions, and paul LOVED it. Here's my recipe if you like!
Grilled Corn Salad
2 ears of corn
1 avocado, cubed
2 tbs cilantro, chopped
1/4 small red onion, chopped
1 lime, juiced
2 tbs olive oil
big pinch of salt
pepper to taste
1. soak the ears of corn in a bowl of water for 10-15 minutes. peel back husks, remove silk, and pull husks back over to cover corn while cooking
2. grill corn for 5 minutes over moderately hot fire. I then pulled back the husks and rolled the corn around over high heat because I like little burnt kernels
3. remove corn from grill, and when they're cool enough to handle, peel off husks. scrape kernels off cobs and place in a large bowl
4. toss with remaining ingredients
5. enjoy!
